Amongst those who cultivated their vineyards in the valley embraced by the villages of Csopak and Paloznak and Lake Balaton were the veteran legionnaires of the Roman settlement residing in Fajsz (Balácapuszta) from the first until the fourth century A.D., the feudal tenants of the Veszprém valley convent to whom our King Saint István first bequeathed vineyards in the 11th century, as well as the famous János Ranolder in the middle of the 19th century, the Bishop of Veszprém Diocese, who was renowned for his wines.
Such breathtaking landscape, which is remarkably diverse in terms of geology, hot in the summer days and refreshed during the nights by the cool winds coming from Bakony hills, was created by God for vines. Here only the best wines may be desired. Humbly before the ancestors, the landscape, the vine, the 200-year-old wine cellar and the numerously disrupted but ever awakening traditions.

The owners of Jásdi Wine Cellar - the Jásdi couple - manage the best fields of this wine region, areas measuring 15 hectares altogether
The main ingredient of the leading wine of this wine region, the Olaszrizling (Italian Riesling) is grown on the majority of the land, however, we produce excellent Chardonnay, Szürkebarát (Grey Monk) and Cserszegi Fûszeres (Spicy from Cserszeg) as well.
The wine cellar was built at the end of the 18th century; and in 1849 it became the centre of the family winery of the bishop of Veszprém, János Ranolder. This was the place where the reputation of the wines of Csopak was established. It was the land of the bishop where the several types of white wine, which had been mixed until that time, were winnowed out for the first time. According to the register of the national inspector of viticulture of the time wine-growing and processing met the highest standards of the age. Local wines were very popular in Vienna, Bratislava, Warsaw and Pest as well. As almost in all parts of Europe the phylloxera epidemic destroyed local vineyards from 1890 on. At the end of the century a new owner, wine-cooper Salamon Hûvös started business in the new vineyards. His wine-dresser, who was one of the most outstanding experts of the age - István Bakonyi -, lived in the wineyardist's house with his 6 children. His 7th child, Károly who later became a famous wine improver and the "Father" of the world-famous Cserszegi was born here.
In 1998, after 50 years of stately dereliction it became the property of the Jásdi family in ruins.
With the complete and exacting renovation of the classicistic building complex and the 40-metre-long wine cellar the most modern wine-processing and viticultural equipment were obtained.
The almost 200-year-old building complex with its walls of almost one metre in thickness and its cool cellar built from rubble stones has proved to be an ideal place also for viticulture of the 21st century.
The first results of the owners' activities confirmed their expectations.
The National Park of Lake Balaton awarded the wine cellar with the title of "The finest wine cellar of the year 2000" in September, 2000.
Out of 21 wines - entered for regional wine competitions - 16 were qualified as gold medallists.
In the VINAGORA International Wine Competition, which is one of the 8 most important events in this profession, the Jásdi Wine Cellar Ltd. was one of the most successful competitors of Hungarian family wineries with its one gold and one silver medals. (Its Chardonnay barrique wine was given the highest score in the whole Hungarian field of this type.). Then more and more significant achievements came. In the survey carried out by the magazine WINE LOVER in 2005 the Jásdi Cellar was chosen among the 12 most popular wineries of Hungary for the second time.

Our winery will experiment for a long time.
We will experiment with everything. old and new grape varieties, famous and less famous areas, methods of cultivation and stock loading. We will continue to search for a new, a better in our cellar as well. We press clusters or grapes without the stalk, under carbon dioxide or cold.
We ferment wine in small barrels or in a refrigerated steel tank, with variety-specific yeast or with wild yeast.
We mellow wine with fine sediment and in barrique barrels. Naturally, all of these are carefully planned. Our work was helped by a French wine-growing expert. We have to present great wines in Csopak which will attract the attention of the whole world!
